Aunt Pee Wee's Baked Squash

Well believe me....squash is NOT Jamie's favorite vegetable, although she will eat most other veggies.  But she has conceded that I can post this recipe because it was passed on to me from a cousin (??) Lynda McInnerney.  I made it a couple of nights ago and got some pretty good reviews (not from Jamie of course....lol).  I even trimmed down the fat and used olive oil instead of the bacon fat. I made it and toasted the meal to my Aunt Pee Wee and my Dad- good memories.

Aunt PeeWee's Baked Squash

Steam 3-4 lbs of yellow squash
2 Tablespoons of bacon grease
1 onion diced
1 tsp sugar
salt & pepper to taste
3 slices of uncooked bacon

Heat oven to 375 degrees. Steam squash until tender (I used the microwave).  In skillet heat bacon grease ( I used olive oil) and add diced onion.  Cook until tender.  Mash squash with a potato masher and add cooked onions.  Add sugar, salt and pepper to taste.  Pour squash mixture in a rectangular baking dish.  Top with three slices of uncooked bacon.  Cook approximately 45 minutes or until all liquid is absorbed and browning around the edges has occurred.

Jamie's turn:

I didn't eat the squash, but it looked good.  I do like bacon.  Mom liked the recipe because it was her Aunt's.  She has a Banana Cake recipe we are going to try tomorrow.  I will let you know how it is.  Enjoying my Christmas vacation!  Bye Bye!

Coconut Cream Pie

That pie is heavenly!  We decided we would like to share the recipe for this pie first because it is so yummy!

This recipe came from the Taste of the South Magazine

3 1/4 cups whole milk
1/4 cup unsalted butter
3 eggs
1 2/3 cups sugar
1/2 cup cornstarch
1 1/2 tsp vanilla extract
1 refrigerated pie crust
2 cups sweetened flaked coconut
1 container Cool Whip, thawed
Garnish: 1/4 cup toasted coconut

In a large saucepan, combine milk and butter and bring to a boil over medium heat.   Remove from heat.  In a large bowl, combine eggs, sugar, and cornstarch.  Beat at medium speed with an electric mixer for 5 minutes.  Add half of the egg mixture to the hot milk, whisking well to prevent curdling.  When mixture is smooth and thick, add remainder of egg mixture, whisking well.  Reduce heat to a simmer and cook for 10 minutes, stirring occasionally.  Remove from heat and add vanilla, stirring to mix well.  Fill a large bowl with ice and water to make an ice bath.  Transfer hot custard mixture to a stainless steel bowl and set bowl over ice bath to cool to room temperature.  Cover and refrigerate for 1 to 2 hours.  Preheat oven to 425 degrees, unroll piecrust and fit into a 10 inch deep dish pie pan.  Bake for 20 minutes or until lightly browned.  Remove from oven and let cool.  When custard mixture has cooled and thickened, add coconut, stirring to mix well.  Spoon custard into cooled pie crust.  Top with Cool Whip and toasted coconut.

Hi!  The pie was delectible!  It was also fast, fun and yummy.  Next we are going to share a squash recipe-NOT my favorite vegetable!  But it was passed down from my mom's aunt PeeWee and she wanted to share it.  When we made the pie, we also made Turkey breast and stuffing in a dutch oven.  The turkey was sooooo juicy.  Dad and Trey cooked it over an open fire.  It was good!  We had a good dinner.

Christmas Dinner on the Day After Christmas!

Christmas 2009 didn't quite turn out the way we expected it to.  Shortly after opening gifts and sharing a wonderful breakfast, my oldest daughter, Regan, began having contractions....way to early in her pregnancy.  This sent us running out the door to the hospital.  After a barrage of tests and a shot to calm the contractions, we were finally able to come home around 7 pm.  Much too late to start that wonderful Christmas dinner we had planned.  Our prayers were answered for Baby Tarryn to stay in the oven a little longer, so dinner didn't seem so crucial.

Today, the day after Christmas, with a refrigerator FULL of good food, just waiting to be cooked, we find ourselves antsy for the clock to turn 4pm so we can get rolling on this meal.  We have already started on dessert, a yummy Coconut Cream Pie.  It's chilling in the fridge for another hour or so and then we can put it together.  Until then, I thought I would let Jamie take over and put her thoughts in writing about Christmas.  H-e-r-e's JAMIE......
Me and my mom decided  we would do a cook book but for starters we're doing a blog. Cooking is my favrite thing to do. Yesterday was Christmas and I got boots, a belt, Julie&Julia, a wii  game called Cook Or Be Cooked, and other nice things. My favorite thing was Julie&Julia because it gave me this wonderful idea, and not just because of that, it was AWESOME.
